By the way, I talked to the Riverwood drunk and he wanted common ale, and another drunk in Whiterun who wanted me to steal an Aragonian ale for him. Nobody wants the Honningsmead brew so far...

I also hve a misc. quest to talk to Kodlak - except I already have and I still have the quest stare:
I guess just asking him why he joined the companions doesn't count, but that I have to ask if I can join? I'm not interested in joining them

You haven't joined the Companions yet?
I wondered why you hadn't mentioned them.
They have quite a long storyline and you can have them as followers at the end, you know, if Lydia dies again.
You can also have Uthgerd from the Bannered Mare if you beat her in a fist fight.

The useful three drunks spawn randomly at the roadside when wandering around between locations.

I also made the mistake of brining Lydia into Anise's cabin basement, which apparently upset her so much that she wouldn't leave again. At least not until she'd told me I wasn't supposed to be there. Then she came back up and was her usual self...

The early Companions quests were the first things I did in Whiterun, well, after helping Ysolda, so maybe I was still very naive about the world back then.

Well, you're the one who told me to read everything. The companions have a book that kind of give their secret away. If a certain someone's name and armour design isn't hint enough... well, it's probably not enough in itself, more like a confirmation once you read the book...

I wonder if I'll ever actually download any mods? There are so many, I won't ever be able to browse through them all. And I'm not sure how Vortex vor... I means works, but I can't be bothered with the tutorial videos, as usual...

Vortex works pretty seamlessly with the nexusmods website. You just choose the ModManager download option and Vortex does it for you. The mod will then appear in Vortex with the option to install/enable/disable/uninstall and it copies all the original files so you don't have to worry about overwriting stuff.

Make sure you do a clean save to go back to before you start experimenting because mod information is stored in subsequent saved games.

Edit: Of course, my experience is based on a completely different version of the game so any differences/problems are ...erm... definitely not my fault.
