I'm very not certain how the heck to finish this on christmas eve (my deadline, for using it as a holiday greeting) but at least I now have pretzels. Of a kind. Without sugar (and gluten, obviously)

 

Some of my licorice could use a bit of that gummy look you keep talking about Val. They look more like glass at the moment. I find it difficult to really see a difference between transmission and subsurface scattering (does that DO anything??? :dumb: ) as well as coat and sheen. :dunno: Anyway, one can't really see much of them anyhow. 

Edit/PS - I have yet to try the salt scatter. But for now it's bedtime. Still need to work a couple of hours tomorrow and go to the grocery store, so can't sleep all day. :dry:

To be honest I'm struggling with the gummy thing too.
Increasing the roughness should stop it looking like glass but it still doesn't seem to be making it look right for me.
Transmission results in proper transparency and refraction while subsurface scattering is an internal glow that will still always be opaque and too much of it ends up with a waxy look. One important point about transmission is that it results in the surrounding background contributing to the colour so if you don't have an HDR illuminating the scene then it can end up looking way too dark no matter what colour you select for the material. But this will only be an issue with Eevee and Cycles. Like I said before, the material view has it's own set of lighting conditions.
If I ever solve this I will let you know but it feels like I'm wasting my own time with my failures here. :S
Perhaps another type of candy would be better. :shrug:

By the way, do you have Ambient Occlusion checked in the Eevee render settings. That can improve the material view a little bit, so I've just discovered. But maybe that's only in my older version of Blender. :dumb:

Your subsurface colour is currently white according to your node, maybe change that to the colour of your gummy stuff and it will look more gummy stuff like.

The colour is a grey/white by default but it's OK cos I'm not using any subsurface effect in this material. The value above it, just below the green, is zero.
So at the moment it's all Transmission with a bit of noisy bump and Roughness about 0.5ish.

EDIT: And at the moment I've got rid of the tree and instead I'm using the material for some dark purplish winegums around the edge of the "cake" and it looks a bit better used that way.
