I just realised all the cows and goats and chicken of Skyrim are male 
In spite of giving milk and laying eggs and definitely having teats (cows)...

All male, too. That stoopid misogynistic Aldiun probably doesn't bother resurrecting females! 
(Or maybe they'd be too smart to just obey him for no reason...
)
Actually it seems this game is kind of very male-centered when going through character creation in the CK. Everything that isn't playable is male, basically. And going through the hair-styles many female hairs are just female versions of male hair - female elder hair is just (3) female hairs duplicated while male elder hair is actually 6 distinct "do's". Though they're still very similar to each other, basically just with varying amounts of hair left. Also male redguards have 8 do's, all looking a bit like african hair, while the women have 4, two of which is basically a shaved head and two are straight hair...
(Admittedly two of the 6 male redguard hairs are also basically shaved heads)
Some day I hope to have the time, energy and skills to rework the hairs a bit.... which is why I am wasting time going through them all. And yes I know it's already been done to death, I just find fault with everything not made by me, ok?

Probably just a way of saving space or time. Lots of Bethesda games seem to have quirky little things going on just to make things work. The Xbox Morrowind used to reboot the whole console behind a loading screen and famously a train in one of the Fallout games was actually a hat.

But they scale to above your level. 
When I was rubbish I could easily kill the normal Falmer (well, almost easily) but now I'm level 48 I get the much-more-difficult Falmer Warmonger who are rather good with their frosty magic.
It's like having to deal with those Ancient dragons all the time. They all do so much damage!
This is the downside of playing a single game for so long.
I think there is an enemy cap at level 60, if I remember rightly, so everything should become easier again after that.
