But when the heck is the market open!?

Edit: Never mind, I sold all my loot to the drunken huntsman. Or rather, to his brother.  

Shops usually open at around 8am but some of the taverns stay open longer so you may be able to sell some stuff there.

However I don't know when your real Swedish shops are open for your groceries.

That's alright, I can keep tabs on those.

Now to find that stone tablet...

Uh oh. My health is low and I should use a spell or potion to gain health. How do I do that mid fight??? I mean, the game freezes when I tab, and all, but.... is that how? Or are you supposed to be able to use magic and weapons at the same time???

You can consume a potion from the inventory when the game is paused.
As for magic you can assign a spell to one hand and have a one-handed weapon in the other.
Also you can set anything in your inventory as a Favourite which will then appear in the quick menu when you press Q and from there you can also assign numbered hotkeys so that they can be selected without opening menus.

Thanks Val - Skyrim doesn't seem to come with much of a tutorial...

Edit: There's SOOOO much loot I have to leave behind  
If I come back later, do I have to fight everything again? Or do the dead stay dead? 

Edit 2: Also I don't understand how to select "perks". I'm guessing it's the constellation thingies and I can sort of scroll through them to read about them, but I have no idea how to SELECT them. And I tried googling but the the top answers where either videos or explained that you can get perks when levelling up. Thank you, I got that much. *2

Dead is dead.
More baddies may move in or respawn after several in-game days (sometimes as long as 30) so you'll be ok.

I think there's a tutorial section in the menus

As for perks I think you either click on the stars with the mouse or press E when they're highlighted.
If I sound uncertain it's because I've got the modded interface so mine may be different.
